Planning a two-week pasta-focused trip through Italy - any must-visit spots?

My partner and I are finally planning our dream culinary trip to Italy next spring, and we want to dedicate the entire journey to finding the best regional pasta dishes. We are starting in Rome, but we are open to taking trains anywhere if the food is worth the detour. We are particularly interested in authentic spots that aren't just tourist traps in the city centers. Does anyone have recommendations for specific pasta types or hidden gem trattorias we shouldn't miss? We are trying to balance the classics like Carbonara with more obscure regional specialties.

If you are in Rome, skip the places with pictures of food on the menus. Go to Testaccio for real carbonara, specifically Flavio al Velavevodetto.

Totally agree with the Testaccio suggestion! Just make sure to book weeks in advance because it gets packed.

Don't sleep on Bologna. It's literally called 'La Grassa' for a reason. You need to try the tortellini in brodo.

Bologna is essential, but honestly, head further south to Puglia for the orecchiette. It's a completely different vibe.

I'd suggest looking into Gragnano near Naples. It's the birthplace of dried pasta and the history there is incredible.

Good point about Gragnano, but keep in mind it's mostly industrial. For a rustic experience, stick to the trattorias in the mountains of Abruzzo.

Two weeks is a short time for all of Italy. Pick two regions, maybe Lazio and Emilia-Romagna, and really dive deep.

I second the two-region limit. Trying to hit Rome, Bologna, and Puglia in 14 days will just leave you exhausted on trains.

Has anyone mentioned Carbonara vs. Gricia? Gricia is the OG version without egg. You have to try it at a local spot in the Castelli Romani.

Yes! Gricia is the best. Much cleaner flavor than carbonara if you get good guanciale.

Look for 'osteria' instead of 'ristorante'. The prices are usually better and the food is more home-style.
